Northumberland County Council is promoting healthy school food
as part of the National School Meals Week initiative.
This year, National School Meals Week takes place on the
9th to 13th November, which is run by the
Local Authority Caterers Association and supported by the School
Food Trust and ‘Assist Facilities Management’.
The Council has embraced this initiative and is promoting
healthy lifestyles in all schools throughout
Northumberland.
A competition has taken place with schools to devise a menu to
be served in all Northumberland Schools.
Councillor Lesley Rickerby, Northumberland County Council’s
executive member for children’s services, said: “I am delighted
with the response to this competition. It has been a pleasure
looking through the various menus and I’m amazed at the amount of
nutritious recipes that have been put forward.
“The winner of the competition was Newbrough First School in
Hexham, for their ‘Mediterranean pasta with chicken and bacon’ and
for their ‘eves pudding’. These recipes will be served in all
Northumberland schools on Wednesday, 11 November.”
Rudy Imhoof, the Council’s Head of Facilities Management, said:
“Promoting health nutritious balanced lunches are a priority for
the Council and the National School Meals Week highlights the
importance of this work. Health meals and regular exercise
are important in the development of all pupils. As well as
using the winning recipes at school, I’m encouraging parents and
carers to try them at home”.
The winning recipes are listed below:

Mediterranean Pasta With Chicken and
Bacon
4 oz Pasta
2 400g tins of chopped tinned
tomatoes
1 tbps tomato puree
1 garlic clove (crushed)
1 onion (chopped)
1 red pepper (chopped)
1 green pepper (chopped)
1 yellow pepper (chopped)
4 rashers of lean back bacon (cut into bite
size bits)
1 chicken breast ( cut into bite size
bits)

Put medium pan of water on to boil and add pasta boil for 8
minutes until cooked. While the pasta is cooking, Fry the
chicken in none stick frying pan with a little spray
fat for 6 minutes turning half way through add the onion,
peppers and garlic and cook until soft but not browned. Then
add the chopped tomatoes and puree and continue to cook for 5
minutes. Grill or dry fry the bacon for 5 minutes turning half way
through cooking. When the pasta is cooked drain well and add
to the sauce mixture with the bacon and stir well. Serve with
garlic bread and ENJOY!

EvesPudding
4 brambly apples (peeled & sliced)
3 tbps sugar
1/2 tsp cinnamon
6 oz self raising flour
6 oz sugar
6 oz margarine
3 free range eggs

Put the apples and 3 tbsp sugar in a pan
and cook for 5 minutes until starting to go soft, add the cinnamon
and cook for a further 3 minutes and set aside.
Cream the margarine and 6 oz sugar until light
and fluffy add the flour and eggs gradually and mix for 5
minutes.
Arrange the apple in a greased 12
inch round baking tray add the cake mixture to the top
and bake for 15 to 20 minutes at 180*c or until a skewer comes
out clean, serve with custard and ENJOY!
